Fruits of the prunus cerasus plant (or “sour cherry”), sour cherries grow spontaneously in the hills of Montefeltro, near Peglio (a characteristic village in the province of Pesaro and Urbino), where the Paiardini agricultural farm is located.

They are characterized by a very intense red color and a slightly acidic but very sweet flavor. The ancient recipe used is simple to prepare and handed down, from generation to generation, by local farmers who use ripe cherries for this recipe, harvested between late June and early July.

The Paiardini agricultural farm puts them in a jar where they are kept in their own syrup with the only addition of organic cane sugar and are free of any type of preservative.

The sour cherries, preserved in a jar, are delicious tasted alone, giving the palate an intense, not too sweet flavor and a fresh and acidic sensation. But they are really excellent also in combination with semi-mature or blue cheeses.

Combining them with fresh water or sparkling wine, you can even get two drinks, one refreshing and the other as a flavored cocktail.
